Hummus Among Us

After making the Make Ahead Butterhorns, I was just on a cooking roll, so I decided to keep going with some homemade Hummus. I've never made Hummus before, mostly because I didn't think it would be something that my husband would be very interested in eating. And, I'm probably right. If I would have just bought some hummus from the store and brought it home for him to snack on with his pita chips and fresh veggies, I doubt he would have been that into the idea. However, we recently went on a Caribbean cruise, and every night at dinner they served fresh bread with homemade hummus. He loved it, so I decided to try and bring that goodness into our home! I got the recipe from Cooking Light , so here it goes:

Hummus
3 tablespoons tahini (sesame-seed paste)
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander (I used whole coriander, because I didn't have ground)
3/4 teaspoon salt
1/8 teaspoon ground red pepper (I used red pepper flakes)
2 garlic cloves, chopped
1 (15 oz) can chickpeas (garbanzo beans), rinsed and drained




I used the reduced sodium chickpeas, and goya chopped garlic from the jar. Basically you just get all the ingredients together, and add them to the food processor. I accidentally used a 16oz can of garbanzo beans instead of a 15oz can without realizing it, so my hummus was very thick at the beginning. 


After I realized that I had used too large of a can though, I added some of the liquid from my chopped garlic jar (about 3 teaspoons), and pureed it to pieces!


That's what the end result looked like, and let me tell you, it is gooood. It has a great taste and just the right amount of spices. I can't wait to try it on some homemade bread or fresh veggies. And, as if I needed more reason to like it, it only has about 650 calories for the whole batch. I don't plan on sitting down and eating the whole batch at once, so I figure it will be a great snack if I eat a few tablespoons at a time.
